rasam powder

Ingredients
Cumin seeds21/2 teaspoon

Coriander seeds 11/2 teaspoons

Fenugreek seeds (methi dana) 1/2 teaspoon

Black peppercorns 2 teaspoon

Whole dry red chilli 5

Oil 1 teaspoon

Split pigeon pea (toor dal/arhar dal) 1/3 cup

Asafoetida 1/2 teaspoon

Turmeric powder 1/2 teaspoon

Curry leaves 30

Method
Dry roast cumin seeds, coriander seeds, fenugreek seeds, black peppercorns and whole dry red chillies. Set aside to cool. Heat oil in a pan and sauté the dal till red. Set aside to cool. Grind the roasted ingredients with asafoetida, turmeric powder and curry leaves. Cool and store in airtight containers.

BABY UTTAPAM

ingredients:

rice       :1 cup
urad dal:1 cup
salt       :to taste
butter   :1/2 cup

for topping:

onion :2(small)
tomato:2(small)
capsicum:2(small)
moong dal:250 gms
green chilli:2small spoon
cheese:1/2 cup(grated)

method:

soak rice in 6 cup of water.and urad dal with 4 cup of water whole night.next day through water from rice n dal.put it into a grinder and make pastes of both the ingredients one by one.after making paste mix them and leave it for 6 to 8 hrs till it gets fermented.again mix all the mixture by adding salt and water as much as it requires.switch on ur gas and put non stick pan on it.add a spoon of oil into it and clean it with water soaked cloth.now add a spoon of butter into ur pan put 1/2 small bowl of mixture into it.give it a circle shape and put ingredients of topping on it(uttapam).bake it on slow flame for 3 to 5 min.if u want to bake both the side u can do it.ur baby uttapam is ready to serve.serve it with sauce/chatney

MOONG DAL HALWA

ingredients:

moong dal:1/2kg(paste)
sugar   :1/2kg
milk   :250gm
mawa  :250gm
dry nuts:1 cup(pieces)
kesar    :pinch
ghee     :250gm
green cardamom:1or 2(powder)

method:

heat a vessel and add ghee into it.pour moong daal paste into ittill it gets golden brown.add milk and stir it till milk gets dry.than add sugar and stir it.take another vessel and fry some dry nuts.take a spoon of water and add kesar for colour.add it into halwa.stir it till the vessel leaves moong daal halwa.off ur gas and add fried dry nuts in it and serve it.

कढ़ाई मे  घी गर्म करके मूंग दाल के पेस्ट को हल्की आंच पर भूने .हलके सुनहरे होने पर दूध डाल  दे .जब दूध सूख  जाये तब चीनी  डालें और धीमी आंच  पर भूने .अब एक दुसरे कढ़ाई मे  मावा को सुनहरा भुने .फिर हलवे मई डाल कर अच्छे से  मिला ले .एक चम्मच पानी मे केसर घोलें .हलवा जब घी छोडने लगे तब आंच साईं नीचे उतर ले और मावा डाल कर सर्व  करें . 

CORN SALAD

sweet corn:1(pkt)boiled
onion          :1(chopped)
tomato       :1(chopped)
coriander leaf(hara dhania):1 spoon
pudina leaf  :1 spoon(chopped)
lemon juice:2 spoon
salt             :acc.to taste
sugar         :1/2 spoon
chat masala:acc.to taste

method:

put corn,onion,tomato,coriander leaf,pudina leaf,into a bowl n mix .than add salt,chat masala,sugar,lemon juice into the mixture.salad is ready.

if u buy sweet corn from the market.before preparing salad put it into the water for 10 minutes.

moodak

INGREDIENTS:
rice:2 cup
ghee:1 spoon
salt:acc to ur taste

FILLING:
coconut:(grated):1.5 cup
gud:3/4 cup(grated)
coriander powder:1/2 spoon
 
Washed rice take a while to dry in a clean cloth. The finer grinding rice flour to prepare. Imen ghee in a pan and boil a cup of water mix. Now add the rice flour in the water. Stir the mixture constantly so after putting dough do not lump it. Remove from the pan and the gas to cool for ten to fifteen minutes. And it must offer another pan on low light grated coconut, nuts and cook until light brown, add molasses(gud). Keep from heat to cool off. After cooling the mixture is stuffed into a bike proportions. Take the proportional share Ante woven rice. These Loiyon hands began to extend lubricant filling stuffed in between eight to ten emphasis Modak size. Take the whole ball cooked in steam.its ready to taste. चावलः दो कप
शुद्ध घीः एक चम्मच
भऱावन के लिएः कद्दूकश किया नारियल (डेढ़ कप), कद्दूकश किया गुड़ (तीन चौथाई हिस्सा) व अन्य सूखा मेव
धुले हुए चावल को कुछ देर के लिए किसी साफ कपड़े में सूखा लें। इसके बाद चावल को पीसकर महीन आटा तैयार कर लें। पैन में एक कप पानी उबालें और इमें घी मिला दें। अब इस पानी में चावल का आटा डालें। आटां डालने के बाद इस मिश्रण को लगातार चलाते रहें ताकि, इसमें गांठ न पड़े। इसके बाद पैन को गैस से उतार दें और दस से पंद्रह मिनट तक ठंडा होने दें। हल्की आंच पर दूसरा पैन चढ़ाएं और उसमें कद्दूकश किया नारियल, सूखा मेवा व गुड़ डालकर हल्का भूरा होने तक पकाएं। आंच से उतारकर ठंडा होने के लिए रख दें। ठंडा होने के बाद इस भरवां मिश्रण को समानुपात में बांट लें। चावल के गूंथे हुए आंटे को भी समानुपात में बांट लें। इन लोइयों को चिकनाई लगे हाथों से फैलाएं और इसके बीच में भरवां भरकर आठ से दस बल देते हुए मोदक का आकार दें। इसके बाद सारी लोइयों को भाप में पका लें। गर्मागर्. 

CHOCOLATE LADOO

सामग्री
मिल्क पाउडरः 16 चम्मच 
कोको पाउडरः चार चम्मच 
बटरः तीन चम्मच 
पानीः आधा कप 
वनीला एसेंसः एक
बनाने की विधि
पानी को गर्म करें और चीनी डालकर गाढ़ी चाशनी तैयार करें। चाशनी में बटर डालें और जब वह पिघल जाए तो उसमें वनीला एसेंस डालें। एक अलग बर्तन में कोको बाउडर औऱ मिल्क पाउडर को मिक्स करें और उसमें सिरप डालकर मिश्रण तैयार करें। अब अपने हाथ में घील लगाएं औऱ थोड़ा-थोड़ा मिश्रण लेकर उसका लड्डू तैयार करें। अच्छी तरह से ठंडा होने दें और सर्व करें। लड्डू सुंदर दिखे, इसके लिए उसके ऊपर बुरादा छिड़क सकते हैं.
